- 1 large ripe avocado, diced
- ½ cup (or more, to taste) ranch dressing
- 4–6 large (10–12 inch) flour tortillas
- ½ cup shredded Monterey Jack cheese (optional)
- ¼ cup canned corn, drained (optional)
- ¼ cup black beans, rinsed and drained (optional)
- Salt and freshly ground black pepper to taste
- Olive oil or butter for pan-searing (optional)
Instructions
- 1. Prepare Chicken: Ensure your chicken is cooked and shredded. If using raw chicken, cook until done, then shred.
- 2. Make Filling: In a large bowl, combine shredded chicken, diced avocado, and ranch dressing. Gently mix until everything is well combined. If using, stir in shredded cheese, corn, and black beans. Season with salt and pepper to taste.
- 3. Warm Tortillas: Warm tortillas in a dry skillet, microwave, or oven until pliable. This makes them easier to roll and prevents tearing.
- 4. Assemble Burritos: Lay a warm tortilla flat. Spoon about ½ to ¾ cup of the chicken-avocado mixture slightly off-center. Fold the short ends over the filling, then tightly roll from the bottom edge upwards, tucking in the sides as you go, to create a neat burrito.
- 5. Pan-Sear (Optional): For a crispy exterior, heat a tiny bit of oil or butter in a non-stick skillet over medium-high heat. Place burritos seam-side down and cook for 2-3 minutes per side, until golden brown and slightly crispy.
