- 3 ripe avocados, pitted and scooped
- 1/2 cup fresh lime juice (from 3–4 limes)
- 1/2 cup fresh cilantro, roughly chopped (plus more for garnish)
- 1 large clove garlic, minced
- 1/2 jalapeño, deseeded and roughly chopped (optional, for mild heat)
- 1.5 cups low-sodium vegetable broth (plus more if needed)
- 1/2 teaspoon sea salt (or to taste)
- 1/4 teaspoon black pepper (or to taste)
Instructions
- Combine all ingredients (avocado, lime juice, cilantro, garlic, jalapeño, 1.5 cups broth, salt, pepper) in a high-speed blender.
- Blend on high until completely smooth and creamy, scraping down the sides as needed.
- Gradually add more vegetable broth, 1/4 cup at a time, until the desired consistency is reached.
- Taste and adjust seasonings, adding more lime, salt, or pepper if desired.
- Pour the soup into an airtight container, pressing plastic wrap directly onto the surface to prevent browning.
- Chill in the refrigerator for at least 2-4 hours, or preferably overnight, until thoroughly cold.
- Serve chilled, garnished with extra cilantro, tortilla strips, or diced red onion.
