- 1 lb Ground Beef (80/20 lean recommended)
- 1 medium Onion, finely chopped
- 1 Bell Pepper (any color), chopped
- 1 can (15 oz) Corn, drained
- 1 can (15 oz) Black Beans, rinsed and drained
- 1 can (10.5 oz) Condensed Cream of Mushroom Soup
- 1/2 cup Milk
- 1 tsp Chili Powder
- 1/2 tsp Garlic Powder
- Salt and freshly ground black pepper (to taste)
- 2 cups Shredded Cheddar Cheese (divided)
- 1 bag (16 oz) Frozen Tater Tots
- Optional: Fresh cilantro or green onions for garnish
Instructions
- Preheat & Brown: Preheat oven to 375°F (190°C). In a large skillet, brown the ground beef. Drain excess grease, then add onion and bell pepper. Sauté for 5-7 minutes until soft.
- Make the Base: Stir in corn, black beans, cream of mushroom soup, milk, chili powder, garlic powder, salt, and pepper. Mix in 1 cup of cheddar cheese until melted.
- Assemble: Pour the beef mixture into a 9×13 inch baking dish and spread evenly.
- The Topping: Arrange frozen tater tots in a single, even layer over the top. (Don’t overlap them for maximum crunch!).
- Bake: Bake for 20-25 minutes until the tater tots are golden and crispy.
- Final Melt: Sprinkle the remaining 1 cup of cheese on top. Return to the oven for 5 minutes until bubbly and melted.
- Rest & Serve: Let it stand for 5 minutes before serving. Garnish with cilantro and enjoy!
