- 1 (15-ounce) can black-eyed peas, rinsed and drained
- 1 cup fresh or frozen (thawed) corn kernels (fire-roasted preferred)
- 1/2 red bell pepper, finely diced
- 1/2 yellow bell pepper, finely diced
- 1/4 red onion, finely diced
- 1/4 cup fresh lime juice (from 2–3 limes)
- 1/4 cup extra virgin olive oil
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- 1/4 cup chopped fresh cilantro or parsley, for garnish (optional)
Instructions
- Prep Your Veggies: Rinse and drain black beans and black-eyed peas thoroughly. Finely dice red onion, red bell pepper, and yellow bell pepper to uniform sizes.
- Combine the Stars: In a large mixing bowl, combine the drained beans, black-eyed peas, corn, diced bell peppers, and red onion.
