  • 1/2 red bell pepper, finely diced
  • 1/2 yellow bell pepper, finely diced
  • 1/4 red onion, finely diced
  • 1/4 cup fresh lime juice (from 23 limes)
  • 1/4 cup extra virgin olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 1/4 cup chopped fresh cilantro or parsley, for garnish (optional)

Instructions

  • Prep Your Veggies: Rinse and drain black beans and black-eyed peas thoroughly. Finely dice red onion, red bell pepper, and yellow bell pepper to uniform sizes.
  • Combine the Stars: In a large mixing bowl, combine the drained beans, black-eyed peas, corn, diced bell peppers, and red onion.
