A deliciously easy weeknight meal featuring tender tortellini enveloped in a rich, creamy tomato sauce, all made effortlessly in your slow cooker. It’s comfort food at its finest with minimal fuss.

- 25 oz (700g) frozen cheese tortellini (or your preferred filling)
- 28 oz (794g) can crushed tomatoes
- 1 cup chicken or vegetable broth
- 8 oz (226g) cream cheese, softened and cubed
- 1/2 cup heavy cream
- 2 cloves garlic, minced
- 2 tsp Italian seasoning
- Salt and freshly ground black pepper to taste
- 2–3 cups fresh spinach, optional
- 1/2 cup grated Parmesan cheese, for serving
- Fresh parsley, chopped, for garnish (optional)
Instructions
- Step 1: Combine the crushed tomatoes, chicken broth, minced garlic, and Italian seasoning in your slow cooker. Stir well.
- Step 2: Cover and cook on low for 3-4 hours or on high for 1.5-2 hours, until the sauce is heated through and fragrant.
- Step 3: Stir in the frozen tortellini. Make sure they are submerged in the sauce. Cover and continue cooking on high for another 20-30 minutes (or 10-15 minutes for fresh tortellini), until the tortellini is tender.
- Step 4: Turn off the slow cooker. Add the cubed cream cheese, heavy cream, and fresh spinach (if using). Stir gently until the cream cheese is fully melted and the sauce is smooth and creamy, and the spinach has wilted.
- Step 5: Taste and adjust seasonings (salt and pepper) as needed. Serve hot, garnished with fresh Parmesan cheese and parsley.
