- 1 tbsp unsalted butter
- 1 lb large shrimp (21/25 count), peeled and deveined
- 1 large shallot, minced
- 3 cloves garlic, minced
- 1/2 cup dry white wine (like Sauvignon Blanc or Pinot Grigio)
- 1 cup orzo pasta
- 3–4 cups low-sodium chicken broth, warm
- 1/2 cup freshly grated Parmesan cheese, plus more for serving
- 1/4 cup fresh flat-leaf parsley, chopped
- 1 tsp lemon zest
- Salt and freshly ground black pepper to taste
- Lemon wedges for serving (optional)
Instructions
- 1. Prep Ingredients: Pat shrimp dry and season with salt and pepper. Mince shallots and garlic. Have broth warmed.
- 2. Sauté Shrimp: Heat olive oil in a large skillet over medium-high. Cook shrimp 1-2 minutes per side until pink. Remove to a plate.
- 3. Build Sauce Base: Add butter to skillet. Sauté shallots 2-3 minutes until soft. Add garlic, cook 1 minute. Pour in white wine, scrape up browned bits, and simmer 1-2 minutes.
- 4. Cook Orzo: Stir in orzo. Add 3 cups warm chicken broth. Bring to a simmer, then reduce heat to medium-low. Cook, stirring frequently, until liquid is mostly absorbed and orzo is al dente (10-12 minutes), adding more broth if needed.
- 5. Combine & Finish: Remove from heat. Stir in Parmesan, cooked shrimp, parsley, and lemon zest. Toss gently.
