- 1 tbsp olive oil
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 1 lb boneless, skinless chicken thighs, cut into 1-inch pieces
- 8 cups good quality chicken broth
- 1 bay leaf
- ½ cup medium-grain white rice (e.g., Arborio)
- 3 large eggs
- ¼ cup fresh lemon juice (from 2–3 lemons), plus more for serving
- Salt and freshly ground black pepper to taste
- Fresh parsley or dill, chopped, for garnish (optional)
Instructions
- 1. Prep Chicken & Aromatics: Cut chicken into 1-inch pieces. Chop onion and mince garlic.
- 2. Sauté & Build Broth: Heat olive oil in a large pot over medium heat. Sauté onion until translucent (5-7 mins). Add garlic, cook 1 min. Add chicken, sear lightly. Pour in broth, add bay leaf. Simmer for 15-20 mins, covered.
- 3. Cook Rice: Remove bay leaf. Stir in rice. Simmer, uncovered, for 15-20 mins until rice is tender.
- 4. Prepare Avgolemono: In a bowl, whisk eggs until frothy. Slowly whisk in lemon juice.
- 5. Temper Eggs: Very slowly, ladle 1-2 cups hot broth into the egg-lemon mixture, whisking constantly. Continue until mixture is warm.
- 6. Combine & Serve: Remove pot from heat. Gradually pour tempered egg mixture into soup, whisking constantly until thickened. Do NOT boil. Season with salt and pepper. Serve with optional fresh herbs.
