  • 2 slices sturdy bread (sourdough, white, or Texas toast recommended)
  • 12 tbsp unsalted butter, softened, or mayonnaise
  • 23 slices cheese (sharp cheddar, Monterey Jack, Muenster, or a blend)
  • 68 slices dill pickles, blotted dry

Instructions

  • Lay out bread slices. Spread butter or mayonnaise evenly on one side of each slice.
  • On the non-buttered/mayo side of one slice, layer half the cheese. Arrange blotted dill pickle slices, then top with remaining cheese. Place the second bread slice (buttered/mayo side up) on top.
  • Heat a non-stick skillet or cast-iron pan over medium-low heat.
  • Place sandwich in the hot pan. Cook for 3-5 minutes per side, or until golden brown, crispy, and cheese is fully melted.
  • Remove, let cool for 1-2 minutes, then slice and serve immediately.
