- 2 slices sturdy bread (sourdough, white, or Texas toast recommended)
- 1–2 tbsp unsalted butter, softened, or mayonnaise
- 2–3 slices cheese (sharp cheddar, Monterey Jack, Muenster, or a blend)
- 6–8 slices dill pickles, blotted dry
Instructions
- Lay out bread slices. Spread butter or mayonnaise evenly on one side of each slice.
- On the non-buttered/mayo side of one slice, layer half the cheese. Arrange blotted dill pickle slices, then top with remaining cheese. Place the second bread slice (buttered/mayo side up) on top.
- Heat a non-stick skillet or cast-iron pan over medium-low heat.
- Place sandwich in the hot pan. Cook for 3-5 minutes per side, or until golden brown, crispy, and cheese is fully melted.
- Remove, let cool for 1-2 minutes, then slice and serve immediately.
