This vibrant salad combines sweet peaches, juicy watermelon, fresh mint, and salty feta for a refreshing summer dish. It’s quick to assemble and perfect for picnics or BBQs.

- 4 ripe peaches, pitted and cut into 1-inch pieces
- 4 cups seedless watermelon, cut into 1-inch cubes
- 1/4 cup fresh mint leaves, finely minced
- 4 oz feta cheese, crumbled
- 2 tbsp fresh lime juice (from 1–2 limes)
- 1 tbsp extra virgin olive oil
- 1/4 small red onion, very thinly sliced
- 1–2 tsp honey or maple syrup (optional, to taste)
- Pinch of salt and black pepper (optional)
Instructions
- In a large bowl, combine the cut peaches, watermelon, minced mint, and thinly sliced red onion.
- In a small bowl, whisk together the lime juice, olive oil, and optional honey or maple syrup. Add a pinch of salt and pepper if desired.
- Pour the dressing over the fruit mixture. Add two-thirds of the crumbled feta to the bowl.
- Gently toss the salad until all ingredients are lightly coated.
- Cover the bowl and refrigerate for at least 30 minutes to allow flavors to meld, up to 2 hours.
- Just before serving, sprinkle the remaining feta cheese over the top. Serve chilled and enjoy immediately for the best texture.
