Scale
- 2–3 medium Persian or Kirby cucumbers
- 1/2 tsp sea salt (for pre-salting)
- 2 tbsp rice vinegar (or fresh lemon juice)
- 1 tbsp low-sodium soy sauce or tamari
- 1/4 tsp freshly cracked black pepper
- 2 tbsp chopped fresh dill, cilantro, or mint (or a mix)
- Optional: 1/4 tsp red pepper flakes, 1 tsp toasted sesame seeds, 1/2 tsp sesame oil
Instructions

- 2. Whisk Dressing: In a bowl, whisk together rice vinegar (or lemon juice), soy sauce (or tamari), black pepper, and any optional sesame oil or red pepper flakes until well combined.
- 3. Add Herbs: Stir in the chopped fresh dill, cilantro, or mint into the dressing.
- 4. Combine & Chill: Add the dried cucumber slices to the dressing. Toss gently to coat thoroughly. Cover and refrigerate for at least 30 minutes before serving, allowing flavors to meld and cucumbers to chill.
