These delightful no-bake frozen s’mores combine a crunchy graham cracker crust, a rich chocolate ganache, and a toasted marshmallow topping. They are the perfect cool treat for any occasion and a fantastic make-ahead dessert.

- 1 ½ cups graham cracker crumbs (about 12 full sheets)
- ½ cup (1 stick) unsalted butter, melted
- 2 tablespoons granulated sugar
- 1 ½ cups semi-sweet chocolate chips or chopped baking chocolate
- 1 cup heavy cream (at least 36% fat)
- 1 teaspoon vanilla extract
- 7 oz (about 1 ½ cups) marshmallow fluff
Instructions
- Prepare the Crust: In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press firmly into an 8×8 inch parchment-lined pan. Freeze for 15 minutes.
- Make the Ganache: Place chocolate in a heatproof bowl. Heat heavy cream until just simmering, then pour over chocolate. Let sit 5 minutes, then whisk until smooth. Stir in vanilla extract. Let cool for 10-15 minutes.
- Assemble Layers: Pour cooled ganache over the chilled crust, spreading evenly. Freeze for another 20-30 minutes until set.
- Add Marshmallow: Spread marshmallow fluff evenly over the set ganache. Use a kitchen torch to toast the top until golden brown, or broil carefully for 1-2 minutes.
- Final Chill & Serve: Freeze the s’mores for at least 3-4 hours, or overnight, until completely firm. Remove from pan, slice with a hot knife, and serve immediately.
