  • 3 tbsp extra virgin olive oil (plus more for serving)
  • Optional: 1 clove garlic, cut in half (for rubbing bread)
  • 2 cups ripe cherry or grape tomatoes, finely diced
  • 4 oz feta cheese, crumbled
  • ½ cup Kalamata olives, pitted and finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp fresh oregano, chopped
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp red wine vinegar
  • ½ tsp sea salt (or to taste)
  • ¼ tsp black pepper (or to taste)

Instructions

  • 1. Prepare the Bread: Preheat oven to 400°F (200°C). Slice bread into ¾-inch thick pieces. Brush with olive oil and place on a baking sheet. Toast for 5-7 minutes, flipping once, until golden and crispy (optional: rub with cut garlic clove after toasting).
  • 2. Make the Topping: In a medium bowl, combine diced tomatoes, crumbled feta, chopped olives, minced garlic, fresh oregano, and parsley. Drizzle with 2 tablespoons of olive oil and red wine vinegar. Season with salt and pepper. Toss gently to combine. Let sit for 10-15 minutes at room temperature for flavors to meld.
