- 1.5 lbs boneless, skinless chicken breasts (about 3 large), sliced horizontally into cutlets
- 1.5 lbs fresh broccoli florets
- 2 tbsp olive oil, divided
- 1/2 tsp smoked paprika
- 1/2 tsp onion powder
- Salt and freshly ground black pepper, to taste
- For the Creamy Garlic Sauce:
- 1 cup plain Greek yogurt or sour cream
- 4 cloves garlic, minced (or more, to taste)
- 2 tbsp fresh dill, finely chopped
- 2 tbsp fresh chives, finely chopped
- 1 tbsp fresh lemon juice
- Pinch of red pepper flakes (optional)
- Salt and pepper to taste
Instructions
- 1. Marinate the Chicken: Pat chicken dry. In a bowl, toss chicken cutlets with 1 tbsp olive oil, smoked paprika, onion powder, salt, and pepper. Marinate for at least 30 minutes, or up to 4 hours in the fridge.
- 2. Prepare the Broccoli: Toss broccoli florets with 1 tbsp olive oil, salt, and pepper.
- 3. Make the Garlic Sauce: In a bowl, whisk together Greek yogurt/sour cream, minced garlic, dill, chives, lemon juice, and a pinch of red pepper flakes (if using). Season with salt and pepper to taste. Set aside.
- 4. Grill the Chicken: Preheat grill to medium-high (400°F / 200°C) and lightly oil grates. Cook chicken for 4-6 minutes per side, until internal temp reaches 165°F (74°C). Rest for 5-10 minutes, then slice.
- 5. Cook the Broccoli: Grill broccoli for 5-7 minutes, turning occasionally, until tender-crisp and slightly charred. Alternatively, roast in a 400°F (200°C) oven for 10-15 minutes.
- 6. Assemble Bowls: Divide sliced chicken and cooked broccoli among bowls. Drizzle generously with creamy garlic sauce. Serve immediately.
