Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts
  • 2 tbsp olive oil, divided
  • 1 lime, juiced and cut into wedges
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp smoked paprika (optional)
  • Salt and black pepper to taste
  • 4 cups corn kernels (fresh or frozen, thawed)
  • 1/4 cup light mayonnaise or plain Greek yogurt
  • 1/4 cup crumbled Cotija cheese (optional, or feta)
  • 1/4 cup fresh cilantro, chopped, divided
  • 2 cups cooked brown rice or quinoa
  • Optional: Sliced avocado for serving

Instructions

  • Step 1: Marinate Chicken. In a bowl, combine chicken with 1 tbsp olive oil, 1/2 lime juice, chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and pepper. Marinate for 15-30 minutes.
  • Step 2: Cook Chicken. Heat 1 tbsp olive oil in a large skillet over medium-high heat. Cook chicken 5-7 minutes per side until golden and cooked through (165°F). Remove, rest, then slice.
  • Step 3: Prepare Street Corn. In the same skillet or grill, char corn kernels until slightly browned. In a separate bowl, whisk mayo/yogurt, remaining lime juice, a pinch of chili powder, salt, and pepper. Add warm corn and half the cilantro; mix well.
  • Step 4: Assemble Bowls. Divide cooked rice/quinoa among 4 bowls. Top with sliced chicken, a generous spoonful of street corn, remaining cilantro, Cotija cheese (if using), and avocado. Serve with extra lime wedges.
