This comforting Hearty Hamburger Stroganoff recipe features tender ground beef in a creamy, tangy sauce. It’s a quick, satisfying weeknight meal the whole family will love, ready in under 30 minutes.

- 1 tbsp olive oil (if needed)
- 1 lb 80/20 ground beef
- 1 medium yellow onion, diced
- 8 oz cremini or white button mushrooms, sliced
- 2 cloves garlic, minced
- 2 tbsp all-purpose flour
- 2 cups beef broth (low sodium preferred)
- 1 tbsp Worcestershire sauce
- 1 tsp Dijon mustard
- 1 cup full-fat sour cream, at room temperature
- Salt and freshly ground black pepper to taste
- 12 oz egg noodles, cooked according to package directions
- Fresh parsley, chopped (for garnish, optional)
Instructions
- Prep Ingredients: Dice onion, mince garlic, slice mushrooms. Get all other ingredients ready.
- Brown Beef: Heat a large skillet over medium-high heat. Add ground beef and cook, breaking it up, until completely browned. Drain excess fat, reserving 1-2 tbsp in the pan. Remove beef and set aside.
- Sauté Aromatics & Mushrooms: Return skillet to medium heat. Add onion and cook 3-5 minutes until softened. Add mushrooms and cook 5-7 minutes until browned. Stir in garlic and cook 1 minute until fragrant.
- Thicken Sauce: Sprinkle flour over vegetables and stir for 1-2 minutes. Slowly pour in beef broth, scraping up any browned bits from the bottom of the pan. Bring to a simmer, stirring, until sauce begins to thicken.
- Finish Sauce: Stir in Worcestershire sauce and Dijon mustard. Return browned beef to the skillet. Reduce heat to low.
- Temper & Add Sour Cream: In a small bowl, whisk about 1/2 cup of the hot sauce from the skillet into the room-temperature sour cream until smooth. Gently stir the tempered sour cream into the skillet. Heat through for 1-2 minutes, stirring, but do not boil. Season with salt and pepper to taste.
- Serve: Serve hot over cooked egg noodles, garnished with fresh parsley if desired.
