- 4 (6-ounce) salmon fillets, skin-on or off
- 1/2 cup pineapple juice (100% unsweetened)
- 1/4 cup honey
- 2 tablespoons soy sauce
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- Salt and freshly ground black pepper, to taste
- Optional: Red pepper flakes, fresh cilantro or green onions for garnish
Instructions
- Step 1: Prepare the Glaze. In a small saucepan, combine pineapple juice, honey, soy sauce, minced garlic, and grated ginger. Bring to a gentle simmer over medium heat, stirring occasionally, until slightly thickened and reduced by about a quarter (5-7 minutes). Remove from heat.
- Step 2: Prep the Salmon. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Pat salmon fillets dry with paper towels and season lightly with salt and pepper.
- Step 3: Glaze and Bake. Place salmon skin-side down on the baking sheet. Brush half of the glaze generously over the top and sides of each fillet. Bake for 12-15 minutes, or until the salmon is nearly cooked through and flakes easily.
- Step 4: Broil for Perfect Caramelization. Remove salmon from oven. Set oven to broil (high) and move rack to an upper position. Brush remaining glaze over salmon. Broil for 2-4 minutes, watching carefully, until glaze is caramelized and bubbly. Serve immediately with desired garnishes.
