  • 1/2 cup pineapple juice (100% unsweetened)
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • Salt and freshly ground black pepper, to taste

Instructions

  • Step 1: Prepare the Glaze. In a small saucepan, combine pineapple juice, honey, soy sauce, minced garlic, and grated ginger. Bring to a gentle simmer over medium heat, stirring occasionally, until slightly thickened and reduced by about a quarter (5-7 minutes). Remove from heat.
  • Step 2: Prep the Salmon. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Pat salmon fillets dry with paper towels and season lightly with salt and pepper.
  • Step 3: Glaze and Bake. Place salmon skin-side down on the baking sheet. Brush half of the glaze generously over the top and sides of each fillet. Bake for 12-15 minutes, or until the salmon is nearly cooked through and flakes easily.
