- 1 large head romaine lettuce, finely chopped
- 1/2 small red cabbage, thinly sliced and chopped
- 1 (15-ounce) can chickpeas (garbanzo beans), drained and rinsed
- 4 ounces Genoa or dry-cured salami, cubed
- 4 ounces provolone cheese, cubed
- For the Dressing:
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- 1/2 teaspoon dried oregano
- Salt and freshly ground black pepper to taste
Instructions
- Prep All Ingredients: Finely chop romaine and red cabbage. Drain and rinse chickpeas. Cube salami and provolone to similar sizes. Mince garlic.
- Make the Dressing: In a small bowl or jar, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, oregano, salt, and pepper until emulsified. Taste and adjust seasonings.
