- 1 lb medium-large shrimp, peeled and deveined
- 1 tbsp olive oil, plus extra for finishing
- 1/2 cup finely chopped yellow onion
- 2 cloves garlic, minced
- 1 cup orzo pasta
- 3 cups low-sodium chicken broth
- 1 lemon, zested and juiced
- 1/2 cup crumbled feta cheese
- 2 cups fresh baby spinach
- Salt and freshly ground black pepper to taste

- Prep Your Ingredients: Peel and devein shrimp. Mince garlic, chop onion, zest and juice lemon, crumble feta.
- Cook the Orzo: Heat 1 tbsp olive oil in a large skillet over medium heat. Sauté onion until translucent (3-4 mins). Add garlic, cook 1 min until fragrant. Stir in orzo, toast lightly (1-2 mins). Pour in chicken broth, bring to a simmer. Reduce heat to low, cover, and cook until orzo is al dente and liquid is absorbed (10-12 mins), stirring occasionally.
- Sauté Shrimp: In a separate pan, heat 1 tbsp olive oil over medium-high heat. Add shrimp and cook 1-2 minutes per side until pink and opaque. Remove and set aside.
- Combine and Finish: Remove orzo skillet from heat. Stir in lemon zest, lemon juice, feta, and spinach until spinach wilts. Gently fold in cooked shrimp. Season with salt and pepper to taste.
- Serve Immediately: Serve hot, garnished with extra feta or parsley if desired.
