- 1 ½ cups (180g) All-Purpose Flour (or white whole wheat flour)
- ¾ cup (144g) Low-Calorie Granulated Sweetener (e.g., Erythritol or Stevia blend)
- 1 ½ tsp Baking Powder
- ½ tsp Baking Soda
- ¼ tsp Salt
- 2 Large Eggs
- ½ cup (120g) Unsweetened Applesauce
- ½ cup (120g) Non-Fat Plain Greek Yogurt
- 1 tsp Vanilla Extract
- 1 cup (150g) Fresh Blueberries (or frozen, unthawed)
Instructions
- 1. Prepare Pan & Dry Ingredients: Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan. In a large bowl, whisk together flour, low-calorie sweetener, baking powder, baking soda, and salt.
- 2. Mix Wet Ingredients: In a separate medium bowl, whisk together eggs, unsweetened applesauce, Greek yogurt, and vanilla extract until smooth.
- 3. Combine & Add Blueberries: Pour wet ingredients into dry ingredients. Mix gently with a spatula until just combined (do not overmix). In a small bowl, toss blueberries with 1 tsp of the reserved flour from the dry mixture. Gently fold floured blueberries into the batter.
- 4. Bake: Pour batter into the prepared loaf pan and spread evenly. Bake for 45-55 minutes, or until a wooden skewer inserted into the center comes out clean or with moist crumbs. If browning too quickly, tent loosely with foil.
- 5. Cool: Remove from oven and let cool in the pan on a wire rack for 10-15 minutes. Then carefully remove the bread from the pan and transfer directly to the wire rack to cool completely before slicing and serving.
