  • Total Time: 37 minute
  • Yield: 1 loaf (10-12 slices) 1x

Description

Discover our step-by-step guide to baking delicious, low calorie blueberry bread. Easy to bake with the best flavor!

Ingredients

Scale
  • 1 ½ cups (180g) All-Purpose Flour (or white whole wheat flour)
  • ¾ cup (144g) Low-Calorie Granulated Sweetener (e.g., Erythritol or Stevia blend)
  • 1 ½ tsp Baking Powder
  • ½ tsp Baking Soda
  • ¼ tsp Salt
  • 2 Large Eggs
  • ½ cup (120g) Unsweetened Applesauce
  • ½ cup (120g) Non-Fat Plain Greek Yogurt
  • 1 tsp Vanilla Extract
  • 1 cup (150g) Fresh Blueberries (or frozen, unthawed)

Instructions

  • 1. Prepare Pan & Dry Ingredients: Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan. In a large bowl, whisk together flour, low-calorie sweetener, baking powder, baking soda, and salt.
  • 2. Mix Wet Ingredients: In a separate medium bowl, whisk together eggs, unsweetened applesauce, Greek yogurt, and vanilla extract until smooth.
  • 3. Combine & Add Blueberries: Pour wet ingredients into dry ingredients. Mix gently with a spatula until just combined (do not overmix). In a small bowl, toss blueberries with 1 tsp of the reserved flour from the dry mixture. Gently fold floured blueberries into the batter.
  • 4. Bake: Pour batter into the prepared loaf pan and spread evenly. Bake for 45-55 minutes, or until a wooden skewer inserted into the center comes out clean or with moist crumbs. If browning too quickly, tent loosely with foil.
  • 5. Cool: Remove from oven and let cool in the pan on a wire rack for 10-15 minutes. Then carefully remove the bread from the pan and transfer directly to the wire rack to cool completely before slicing and serving.
