- 1.5–2 lbs ripe nectarines, washed, pitted, and diced
- 2 cups (about 16 oz) full-fat plain Greek yogurt
- 1/4 – 1/2 cup honey or maple syrup (adjust to taste)
- 1 tbsp fresh lemon juice
- 1 tsp pure vanilla extract
- Optional: 1/4 tsp xanthan gum for extra creaminess
- Optional: 1 tbsp vodka or clear liquor (for softer texture)
Instructions
- Step 1: Prepare Nectarines: Halve and pit nectarines. For intensified flavor, roast half of them at 375°F (190°C) for 15-20 min, then cool.
- Step 2: Blend Base: Combine all nectarines, Greek yogurt, sweetener, lemon juice, vanilla (and optional xanthan gum/vodka) in a blender. Blend until perfectly smooth. Taste and adjust sweetness.
- Step 3: Chill Mixture: Pour mixture into an airtight container and refrigerate for at least 4 hours, or preferably overnight, until thoroughly chilled.
- Step 4: Churn (or No-Churn): If using an ice cream maker, churn according to manufacturer’s instructions until soft-serve consistency. For no-churn, proceed to next step.
- Step 5: Freeze for Consistency: Transfer churned (or unchurned mixture) to a freezer-safe container. Press plastic wrap directly onto the surface. Freeze for 2-4 hours (churned) or 5-8 hours (no-churn, stirring hourly for the first few hours).
- Step 6: Serve and Enjoy: Allow to soften at room temperature for 10-15 minutes if too firm, then scoop and serve with your favorite toppings. Store leftovers in an airtight container for up to 2 weeks.
