- 8–10 slices bacon, cooked crispy
- 4–6 oz breakfast sausage, cooked and crumbled (optional)
- 4 large eggs, scrambled or fried
- Fresh fruit (sliced bananas, berries)
- Maple syrup for serving
- Optional add-ins: chocolate chips, nuts, whipped cream
Instructions
- Prepare Fillings: Cook bacon and sausage until preferred crispiness. Scramble or fry eggs. Set all fillings aside, keeping warm if possible.
- Combine Dry Ingredients: In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- Combine Wet Ingredients: In a separate bowl, whisk together milk, egg, and melted butter (or oil).
- Mix Batter: Pour wet ingredients into dry. Mix gently with a whisk or spatula until just combined. A few lumps are okay. Let batter rest for 5-10 minutes.
- Cook Pancakes: Heat a lightly oiled griddle or non-stick pan over medium-low heat. Ladle about 1/4 cup of batter per pancake (aim for 4-5 inch diameter). Cook for 2-3 minutes per side, until golden brown and bubbles appear.
- Assemble Tacos: Lay a pancake flat, add desired fillings, and gently fold in half like a taco.
