- 15 oz (approximately 425g) full-fat ricotta cheese, well-drained
- 2–3 tablespoons honey, or to taste
- 1 large lemon, zested and juiced
- Pinch of salt (optional, but recommended)
- Optional garnishes: extra lemon zest, drizzle of honey, fresh berries, mint leaves
Instructions
- Drain Ricotta: Place the full-fat ricotta in a fine-mesh sieve lined with cheesecloth over a bowl and allow it to drain for at least 30 minutes, or overnight in the refrigerator, to remove excess liquid.
- Combine Ingredients: In a medium mixing bowl, combine the drained ricotta, honey, and lemon zest. Gently fold until just combined.
- Adjust Flavor: Add about half of the fresh lemon juice. Stir, then taste. Adjust with more lemon juice for tartness or honey for sweetness, as desired. Add a tiny pinch of salt if using.
- Chill: Cover the bowl and refrigerate for at least 30 minutes to allow flavors to meld and the dip to firm slightly.
- Serve: Transfer to a serving bowl, garnish as desired with extra lemon zest, a drizzle of honey, or fresh berries, and serve chilled or at room temperature.
