- 6 medium ripe bananas, sliced 1/2 inch thick
- 1/2 cup (100g) packed light brown sugar, plus 2 tbsp for topping
- 1/4 cup (30g) all-purpose flour, plus 1 1/2 cups (180g) for topping
- 1/4 cup (60ml) whole milk, plus 1/2 cup (120ml) for topping
- 1 tsp vanilla extract
- 1/2 cup (113g) cold unsalted butter, cut into small cubes
- 1 tbsp baking powder
- 1/2 tsp salt
Instructions
- Preheat Oven & Prepare Dish: Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
- Make Banana Filling: In a large bowl, gently combine sliced bananas, 1/2 cup brown sugar, 1/4 cup flour, 1/4 cup milk, and vanilla extract. Pour into the prepared baking dish, spreading evenly.
- Prepare Biscuit Topping: In a separate medium bowl, whisk together 1 1/2 cups flour, baking powder, and salt. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs with some pea-sized butter pieces.
- Add Milk to Topping: Pour 1/2 cup milk into the flour-butter mixture and stir with a fork until just combined. The dough will be shaggy.
- Assemble Cobbler: Drop spoonfuls of the biscuit dough over the banana filling. Sprinkle the remaining 2 tablespoons of brown sugar over the biscuit topping.
- Bake: Bake for 35-45 minutes, or until the topping is golden brown and the filling is bubbly. Let cool slightly before serving.
