- 8 oz. flank steak, skirt steak, or top sirloin, thinly sliced against the grain
- 2 large Russet potatoes (for homemade fries) OR 1 lb frozen french fries
- 1 tbsp olive oil (for homemade fries) + 1–2 tbsp high smoke point oil (for steak)
- 1 tsp salt (divided)
- 1/2 tsp black pepper (divided)
- 1/2 tsp garlic powder (divided)
- 1/4 tsp onion powder (divided)
- Pinch of paprika (optional)
- Optional: Favorite dipping sauce (ketchup, BBQ, aioli)
- Optional: Fresh parsley or green onions, chopped, for garnish
Instructions
- Prepare Fries: If using homemade, peel and cut potatoes into uniform spears. Soak in cold water for 30 minutes, then drain and pat thoroughly dry. Toss with 1 tbsp olive oil and 1/2 tsp salt. If using frozen, spread on a baking sheet.
- Oven: Bake at 425°F (220°C) for 20-30 minutes, flipping halfway, until golden and crispy.
- Air Fryer: Air fry at 375°F (190°C) for 12-18 minutes, shaking every 5 minutes.
- Deep Fryer: Fry in oil at 350-375°F (175-190°C) until golden.
- Season Steak: In a bowl, toss steak strips with 1/2 tsp salt, 1/2 tsp black pepper, 1/2 tsp garlic powder, 1/4 tsp onion powder, and paprika (if using).
- Sear Steak: Heat a large skillet over medium-high heat until very hot. Add 1-2 tbsp high smoke point oil. Add steak in a single layer (work in batches if necessary) and sear for 1-2 minutes per side until desired doneness. Remove and let rest for 5 minutes.
- Assemble & Serve: Divide crispy fries between bowls. Top with seared steak strips. Garnish with fresh parsley or green onions and serve with your favorite dipping sauces.
