Ingredients

Scale
  • 1 fresh baguette or ciabatta, sliced into 1/2-inch pieces
  • 8 oz (about 2 cups) fresh strawberries, hulled and diced
  • 1 tbsp granulated sugar or honey (adjust to taste)
  • 1 tbsp balsamic vinegar (for macerating strawberries)
  • 1 cup good quality ricotta cheese
  • 2 tbsp fresh basil or mint, thinly sliced (chiffonade)
  • 23 tbsp good quality extra virgin olive oil
  • 23 tbsp balsamic glaze (store-bought or homemade)

Instructions

  • Prep Strawberries: In a medium bowl, combine diced strawberries, sugar (or honey), and 1 tbsp balsamic vinegar. Toss gently and let sit for 10-15 minutes at room temperature to macerate.
  • Make Balsamic Glaze (if homemade): If not using store-bought, simmer 1 cup balsamic vinegar over medium-low heat for 10-15 minutes until reduced by half and slightly syrupy. Let cool.
  • Toast Bread: Preheat oven to 375°F (190°C). Brush both sides of bread slices with olive oil. Bake for 5-8 minutes, flipping halfway, until golden and crisp.
  • Assemble Bruschetta: Spread a generous dollop of ricotta cheese onto each toasted bread slice. Top with the macerated strawberries (including some juices). Sprinkle with fresh basil or mint. Drizzle generously with balsamic glaze.
