- 1 cup good quality ricotta cheese
- 2 tbsp fresh basil or mint, thinly sliced (chiffonade)
- 2–3 tbsp good quality extra virgin olive oil
- 2–3 tbsp balsamic glaze (store-bought or homemade)
Instructions
- Prep Strawberries: In a medium bowl, combine diced strawberries, sugar (or honey), and 1 tbsp balsamic vinegar. Toss gently and let sit for 10-15 minutes at room temperature to macerate.
- Make Balsamic Glaze (if homemade): If not using store-bought, simmer 1 cup balsamic vinegar over medium-low heat for 10-15 minutes until reduced by half and slightly syrupy. Let cool.
- Toast Bread: Preheat oven to 375°F (190°C). Brush both sides of bread slices with olive oil. Bake for 5-8 minutes, flipping halfway, until golden and crisp.
- Assemble Bruschetta: Spread a generous dollop of ricotta cheese onto each toasted bread slice. Top with the macerated strawberries (including some juices). Sprinkle with fresh basil or mint. Drizzle generously with balsamic glaze.
