  • 1 lb large, firm strawberries (about 1218 berries)
  • 8 oz full-fat cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp pure vanilla extract
  • 1/2 cup heavy cream, cold (optional, for lighter filling)
  • 1/4 cup graham cracker crumbs (or crushed shortbread/vanilla wafers)
  • 1/2 tsp lemon zest (optional)

Instructions

  • Prep the Strawberries: Wash and thoroughly dry strawberries. Hull them and carefully create a cavity in the center of each, making sure not to cut through the bottom. Place cut-side down on paper towels to drain.
  • Whip the Filling: In a bowl, beat softened cream cheese, powdered sugar, and vanilla extract with an electric mixer until smooth and lump-free.
  • Fold in Cream (Optional): In a separate bowl, whip cold heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until just combined.
  • Fill the Strawberries: Transfer the cheesecake filling to a piping bag fitted with a star tip (or use a spoon). Pipe or spoon the filling into the cavity of each strawberry.
  • Garnish and Chill: Gently roll the filled strawberries in graham cracker crumbs (and optional lemon zest). Arrange on a platter and chill for at least 30-60 minutes before serving.
