Description

These delightful baked breakfast tacos feature crispy shells filled with fluffy eggs, savory protein, and gooey cheese. They are incredibly customizable and perfect for a stress-free morning meal.


Ingredients

  • 8 large eggs
  • 2 tbsp milk or cream (optional)
  • Salt and freshly ground black pepper to taste
  • 1 tsp chili powder or taco seasoning (optional)
  • 8 oz breakfast sausage, bacon, or vegetarian crumbles, cooked and drained
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 8 hard taco shells
  • Optional Garnishes: fresh cilantro, diced avocado, salsa, sour cream/Greek yogurt, hot sauce, lime wedges

Instructions

  • Prep Filling: In a large skillet, cook your chosen protein until browned. Whisk eggs with milk (if using), salt, pepper, and optional seasonings. Add eggs to the skillet with protein and scramble until just set.
  • Preheat Oven & Assemble: Preheat oven to 375°F (190°C). Arrange taco shells upright in a baking dish. Spoon the egg and protein mixture evenly into each shell, then top with shredded cheese.
  • Bake: Bake for 8-12 minutes, or until the cheese is melted and bubbly, and the shells are heated through and crisp.
  • Garnish & Serve: Carefully remove from oven. Garnish with your favorite toppings like cilantro, avocado, and salsa. Serve immediately and enjoy!
