Whip up these incredibly flavorful and easy Teriyaki Turkey Rice Bowls for a delicious weeknight dinner. Tender ground turkey, crisp-tender veggies, and a homemade sweet and savory teriyaki sauce come together in under 30 minutes.

  • 1 tbsp olive oil
  • 1 lb lean ground turkey
  • 1/2 tsp salt, plus more to taste
  • 1/4 tsp black pepper, plus more to taste
  • 1 head broccoli, cut into small florets
  • 1 red bell pepper, thinly sliced
  • 2 carrots, thinly sliced or shredded
  • Cooked jasmine or brown rice, for serving
  • Toasted sesame seeds, for garnish
  • Sliced green onions, for garnish
  • For the Homemade Teriyaki Sauce:
  • 1/2 cup low-sodium soy sauce (or tamari for GF)
  • 2 tbsp rice vinegar
  • 2 tbsp honey or maple syrup
  • 1 tbsp fresh ginger, minced
  • 2 cloves garlic, minced
  • 1 tbsp cornstarch

Instructions

  • Prep Ingredients: Mince garlic and ginger. Chop all vegetables. In a small bowl, whisk together all teriyaki sauce ingredients until smooth.
  • Cook Turkey: Heat olive oil in a large skillet or wok over medium-high heat. Add ground turkey, breaking it up with a spoon. Cook until fully browned, about 5-7 minutes. Drain any excess fat. Season with 1/2 tsp salt and 1/4 tsp pepper.
  • Add Vegetables: Add broccoli florets, sliced bell pepper, and carrots to the skillet with the turkey. Sauté for 3-5 minutes, stirring occasionally, until vegetables are crisp-tender.
  • Simmer with Sauce: Pour the whisked teriyaki sauce over the turkey and vegetables. Stir well to coat. Bring to a gentle simmer and cook, stirring constantly, for 1-2 minutes, or until the sauce thickens and becomes glossy.
  • Assemble Bowls: Serve the teriyaki turkey and vegetable mixture hot over cooked rice. Garnish with toasted sesame seeds and sliced green onions. Enjoy!
