Whip up these incredibly flavorful and easy Teriyaki Turkey Rice Bowls for a delicious weeknight dinner. Tender ground turkey, crisp-tender veggies, and a homemade sweet and savory teriyaki sauce come together in under 30 minutes.

- 1 tbsp olive oil
- 1 lb lean ground turkey
- 1/2 tsp salt, plus more to taste
- 1/4 tsp black pepper, plus more to taste
- 1 head broccoli, cut into small florets
- 1 red bell pepper, thinly sliced
- 2 carrots, thinly sliced or shredded
- Cooked jasmine or brown rice, for serving
- Toasted sesame seeds, for garnish
- Sliced green onions, for garnish
- For the Homemade Teriyaki Sauce:
- 1/2 cup low-sodium soy sauce (or tamari for GF)
- 2 tbsp rice vinegar
- 2 tbsp honey or maple syrup
- 1 tbsp fresh ginger, minced
- 2 cloves garlic, minced
- 1 tbsp cornstarch
Instructions
- Prep Ingredients: Mince garlic and ginger. Chop all vegetables. In a small bowl, whisk together all teriyaki sauce ingredients until smooth.
- Cook Turkey: Heat olive oil in a large skillet or wok over medium-high heat. Add ground turkey, breaking it up with a spoon. Cook until fully browned, about 5-7 minutes. Drain any excess fat. Season with 1/2 tsp salt and 1/4 tsp pepper.
- Add Vegetables: Add broccoli florets, sliced bell pepper, and carrots to the skillet with the turkey. Sauté for 3-5 minutes, stirring occasionally, until vegetables are crisp-tender.
- Simmer with Sauce: Pour the whisked teriyaki sauce over the turkey and vegetables. Stir well to coat. Bring to a gentle simmer and cook, stirring constantly, for 1-2 minutes, or until the sauce thickens and becomes glossy.
- Assemble Bowls: Serve the teriyaki turkey and vegetable mixture hot over cooked rice. Garnish with toasted sesame seeds and sliced green onions. Enjoy!
