  • 1 baguette or rustic loaf, sliced 1/2-inch thick
  • 1 pint (about 2 cups) cherry or grape tomatoes, halved
  • 8 oz (226g) fresh burrata cheese, at room temperature
  • 23 tablespoons extra virgin olive oil, plus more for drizzling
  • 2 cloves garlic, peeled
  • 1/4 cup fresh basil leaves, torn or chopped
  • 23 tablespoons balsamic glaze
  • Flaky sea salt, to taste
  • Freshly cracked black pepper, to taste

Instructions

  • Prepare Tomatoes: In a medium bowl, combine halved tomatoes with 1 tablespoon olive oil, a pinch of flaky sea salt, and black pepper. Toss gently and set aside.
  • Toast Bread: Preheat oven to 400°F (200°C). Arrange bread slices on a baking sheet, drizzle with 1-2 tablespoons olive oil, and toast for 5-7 minutes, or until golden and crisp.
  • Rub with Garlic: Immediately after toasting, vigorously rub one side of each bread slice with the peeled garlic cloves.
  • Assemble: Spoon the dressed tomatoes onto each garlic-rubbed toast. Tear burrata into pieces and place a piece on top of the tomatoes.
  • Garnish & Serve: Garnish with fresh basil leaves. Drizzle generously with balsamic glaze, and sprinkle with additional flaky sea salt and black pepper just before serving.
