- 1 baguette or rustic loaf, sliced 1/2-inch thick
- 1 pint (about 2 cups) cherry or grape tomatoes, halved
- 8 oz (226g) fresh burrata cheese, at room temperature
- 2–3 tablespoons extra virgin olive oil, plus more for drizzling
- 2 cloves garlic, peeled
- 1/4 cup fresh basil leaves, torn or chopped
- 2–3 tablespoons balsamic glaze
- Flaky sea salt, to taste
- Freshly cracked black pepper, to taste
Instructions
- Prepare Tomatoes: In a medium bowl, combine halved tomatoes with 1 tablespoon olive oil, a pinch of flaky sea salt, and black pepper. Toss gently and set aside.
- Toast Bread: Preheat oven to 400°F (200°C). Arrange bread slices on a baking sheet, drizzle with 1-2 tablespoons olive oil, and toast for 5-7 minutes, or until golden and crisp.
- Rub with Garlic: Immediately after toasting, vigorously rub one side of each bread slice with the peeled garlic cloves.
- Assemble: Spoon the dressed tomatoes onto each garlic-rubbed toast. Tear burrata into pieces and place a piece on top of the tomatoes.
- Garnish & Serve: Garnish with fresh basil leaves. Drizzle generously with balsamic glaze, and sprinkle with additional flaky sea salt and black pepper just before serving.
