- 2 cups Grated Zucchini (approx. 2 medium zucchinis), squeezed dry
- 1 cup All-Purpose Flour
- 1 cup Shredded Cheese (Cheddar or Mozzarella)
- 3 Large Eggs, lightly beaten
- 1/4 cup Milk (dairy or plant-based)
- 1/4 cup Olive Oil (or melted butter)
- 1 tsp Baking Powder
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
- 1/2 tsp Garlic Powder
Instructions
- Preheat: Preheat your oven to 350°F (175°C) and lightly grease a 9-inch pie dish.
- Prep Zucchini: Grate the zucchini and use a clean kitchen towel to squeeze out as much moisture as possible. (Crucial step for a firm pie!).
- Mix Wet & Dry: In a large bowl, whisk eggs, milk, and olive oil. Stir in the grated zucchini and shredded cheese.
- Incorporate Flour: Add the flour, baking powder, salt, pepper, and garlic powder. Mix until just combined and a thick batter forms.
- Bake: Pour the mixture into the prepared pie dish and smooth the top with a spatula.
- Golden Finish: Bake for 30–35 minutes until the top is golden brown and a toothpick comes out clean.
- Rest: Let the pie cool for 5-10 minutes before slicing to allow it to set perfectly.
Notes
For extra flavor, add 1/4 cup of crumbled feta cheese or fresh basil. Always squeeze the zucchini well to avoid a soggy pie!
