  • 2 cups Grated Zucchini (approx. 2 medium zucchinis), squeezed dry
  • 1 cup All-Purpose Flour
  • 1 cup Shredded Cheese (Cheddar or Mozzarella)
  • 3 Large Eggs, lightly beaten
  • 1/4 cup Milk (dairy or plant-based)
  • 1/4 cup Olive Oil (or melted butter)
  • 1 tsp Baking Powder
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/2 tsp Garlic Powder

Instructions

  • Preheat: Preheat your oven to 350°F (175°C) and lightly grease a 9-inch pie dish.
  • Prep Zucchini: Grate the zucchini and use a clean kitchen towel to squeeze out as much moisture as possible. (Crucial step for a firm pie!).
  • Mix Wet & Dry: In a large bowl, whisk eggs, milk, and olive oil. Stir in the grated zucchini and shredded cheese.
  • Incorporate Flour: Add the flour, baking powder, salt, pepper, and garlic powder. Mix until just combined and a thick batter forms.
  • Bake: Pour the mixture into the prepared pie dish and smooth the top with a spatula.
  • Golden Finish: Bake for 30–35 minutes until the top is golden brown and a toothpick comes out clean.
  • Rest: Let the pie cool for 5-10 minutes before slicing to allow it to set perfectly.

Notes

For extra flavor, add 1/4 cup of crumbled feta cheese or fresh basil. Always squeeze the zucchini well to avoid a soggy pie!
